Forget the same old Thanksgiving sides! Are you ready to experience a stuffing so delicious, so uniquely Italian-American, that it will redefine your holiday feast? Carlino's Market, a Pennsylvania institution with roots stretching back to Italy, is sharing their family's secret weapon: Italian Sausage Focaccia Stuffing. This isn't your grandma's stuffing...unless your grandma happens to be a culinary genius from the old country!
In this delicious exploration, we're diving into the heart of Carlino's Market, a family-run business that has been delighting taste buds for over 40 years. Angela Carlino Milani, a third-generation owner, warmly welcomes us into their kitchen to reveal the recipe that has been passed down through generations. "This is what Thanksgiving smells, tastes like to our family," Angela shares, her voice filled with heartwarming nostalgia.
The magic begins with the focaccia bread, a cornerstone of Italian cuisine. "We're going to pop it in the oven a little bit, just to dry out the bread a little bit," explains Angela. The slightly dried focaccia, with its airy interior, acts like a sponge, soaking up all the savory flavors we're about to introduce. Think of it as laying the perfect foundation for a flavor explosion! And this is the part most people miss... using high-quality focaccia truly elevates the dish.
Next up: the star of the show, Italian sausage! "We're building the flavor here. It starts with good sausage," Angela emphasizes. The sausage is sautéed to a beautiful brown, releasing its rich, savory aromas. But here's where it gets controversial... some people prefer sweet Italian sausage. Which side are you on?
Once the sausage is cooked to perfection, it's time to bring in the supporting cast: the vegetables. Diced celery and carrots join the party, sautéed in extra virgin olive oil and a generous knob of butter. "We like to add carrots. It's a little sweet, has a little sweet touch as it caramelizes in the pan," Angela explains. Then, the onions are added, filling the kitchen with that unmistakable Thanksgiving aroma. "This is where the house really starts to smell like things coming together. I loved it when my grandmother made this stuffing," Angela reminisces. "It really felt like the holidays."
With all the components prepped, it's time to assemble the masterpiece. The focaccia cubes are combined with the sautéed vegetables, followed by the browned Italian sausage. To bind everything together, two eggs are added, along with a generous helping of fresh herbs, including sage, parsley, and thyme. Finally, just enough chicken stock is added to moisten the mixture and marry all the flavors. The stuffing is then transferred to a baking dish and baked to golden perfection.
Carlino's Market is more than just a store; it's a testament to the American dream. Founded by Angela's grandparents, who immigrated from Italy, the market started as a small store in Ardmore, Pennsylvania, and has since expanded to include a second location in West Chester, as well as catering, wholesale, and even wine! "It started with my grandparents, who came here from Italy with my dad," Angela explains. "They had this dream to start a little store in Ardmore, and it just grew and grew."
And it doesn't stop there! Carlino's boasts four vineyards – two in Italy, one in Argentina, and one in France – reflecting their commitment to quality and authenticity. Every aspect of Carlino's Market is homemade and homegrown. "We make everything in house: the breads, the pastry, the pasta, the sauces," says Milani. "We have prepared foods, a grocery store. It's just that foodie haven."
For those who want to recreate this culinary masterpiece at home, the full recipe for the Italian Sausage Focaccia Stuffing can be found in the Carlino family cookbook. "It is special stories and recipes intertwined with things that are special to our family," Angela shares. The cookbook is more than just a collection of recipes; it's a glimpse into the heart and soul of the Carlino family.
Today, three of the Carlino siblings run the business, along with their parents, carrying on the legacy of their grandparents. "The bus dropped us off in front of the Ardmore store, and we had to work if we didn't have a school activity," Milani says. "There were no weekends of sleeping in. We worked on the weekends, on holidays. We were all in."
"This would be a dream to them," she says, her voice filled with emotion. "Honestly. We feel them here."
Carlino's Market Italian Sausage Focaccia Stuffing Recipe
Serves: 8-12
Ingredients:
- 3 tbsp. unsalted butter, divided
- 2 tbsp. extra-virgin olive oil
- 2 lbs. ground mild Italian sausage, casing removed
- 2 cups onion, diced small
- 1 cup celery, diced small
- 1 cup carrots, diced small
- 6 cups focaccia cubes, dried in the oven for about 10 minutes
- 2 cups chicken broth
- 2 eggs, beaten
- 2 tbsp. fresh sage, finely chopped
- 1 tbsp. fresh parsley, finely chopped
- 1 tbsp. fresh thyme, finely chopped
- Freshly ground sea salt, to taste
- Freshly ground black pepper, to taste
Directions:
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Melt 1 tablespoon of butter with the olive oil in a large skillet over medium-high heat.
- Add the sausage and break it up into small pieces using a wooden spoon. Cook thoroughly for 8-10 minutes until browned.
- Remove the sausage from the skillet and set aside.
- Drain about half the fat from the pan and add the rest of the butter to the skillet. This adds richness and depth of flavor.
- Sauté the celery and carrots until they begin to soften. This process brings out their natural sweetness.
- Add the onions and cook until they become translucent. This is a sign that they are cooked through and their flavor has mellowed.
- In a large mixing bowl, combine the focaccia cubes and the sautéed vegetable mixture. Ensure the vegetables are evenly distributed throughout the bread.
- Add the chicken broth and then add the beaten egg and stir all the ingredients together. The chicken broth provides moisture, while the eggs act as a binder, holding the stuffing together.
- Mix in the sausage and herbs and add salt and pepper to taste. Be generous with the herbs – they are key to the stuffing's flavor! Don't be afraid to experiment with other herbs too!
- Transfer the mixture to a greased baking dish and cover with aluminum foil. This prevents the top from burning while allowing the stuffing to cook through.
- Bake for 40 minutes, then remove the foil and bake until golden, about 15 more minutes. The stuffing should be slightly crispy on top and moist inside.
- Serve immediately or allow it to cool, and store in the refrigerator until you are ready to use it. This stuffing can be made ahead of time, making it perfect for Thanksgiving!
Happy Thanksgiving!
